Celebrate Summer With This Fresh Peach Mocktail

Summertime in Colorado means peach season, and peach season means finding ways to utilize the abundance of peaches I always end up buying from numerous roadside stands around Denver. Though harvest season may be a few weeks out, this herbal & sweet mocktail is the perfect way to celebrate the start of summer wherever you are. Peaches and honey pair along a delicate balance of soft lavender and bite of ginger.

Though this recipe calls for frozen peaches, feel free to use fresh if they are seasonally available to you. Just cube them and toss them in the freezer for a quick chill beforehand. My other tip is ensuring you use real maple syrup when making the mocktail. While the fake stuff might be more budget friendly, it’s mostly packed with corn syrup and various dyes. Real maple syrup has a sweetness that cannot be replicated, and is best used for this drink.

Ingredients

Mocktail

  • 1 cup of GrĂĽvi Prosecco
  • 1 cup of peach puree (instructions below)
  • 1/4 cup sparkling water
  • 1/2 cup of lavender simple syrup ( instructions below)
  • 2 teaspoons of raw honey
  • 1/8 teaspoon of freshly grated ginger
  • Pinch of sea salt
  • Small bunch of mint or edible flowers as a garnish

Lavender simple syrup

  • 2 cups of filtered water
  • 2/3 cups real maple syrup
  • 2 tablespoons of dried culinary lavender

Peach puree

  • 2 cups of frozen peaches
  • 1 cup of filtered water

Instructions

Lavender simple syrup

  1. Add the dried lavender to a tea bag or coffee filter
  2. Add the water, maple syrup, and lavender bag to a small saucepan and cook over medium heat. Stir occasionally. 
  3. Let the mixture come to a slight boil, remove from heat and leave lavender to steep for at least 10 minutes. Feel free to try the syrup, if you want a stronger lavender flavor leave to steep longer.

Peach puree

  1. Add peaches and filtered water to high-speed blender or food processor and puree. Set aside.

Assemble the mocktail

  1. Fill two glasses with ice
  2. Add the Grüvi Prosecco, 1 cup of peach puree, sparkling water, lavender simple syrup, raw honey, freshly grated ginger, and sea salt to a cocktail shaker or mason jar with lid and shake well. 
  3. Pour over ice and garnish with fresh mint or edible flowers.
